Save Money With a Fall Vegetable Garden

Some gardening stores are enjoying an increase in business as cash-strapped families with time on their hands try growing their own.

Fall  is a great time to plant, according to Oakhurst Community Garden Executive Director Stephanie Van Parys. "There's nothing that beats a pulling a carrot out of the garden and eating it," she said.

Van Parys recommends beginners start out by building a 4 by 4 raised wooden bed because it will get better drainage than planting vegetables into the ground. "You can grow a lot more in the fall and spring than you can in the summer. Beets, carrots, lettuce, cabbage, broccoli, cauliflower and radishes," she said.
Van Parys demonstrated how individual unpeeled cloves of garlic can be planted in the ground. "You want to dig a hole that's twice the diameter of the clove," she said. The new garlic bulbs can be harvested in May.
